red bell pepper, diced

ground turkey

sweet potatoes, peeled and diced
1/2 cup
chicken broth
4 cups
green kale, finely chopped
2 tsp ranch seasoning
Salt and pepper to taste
1/4 cup
ranch dressing

Directions

In a large skillet, heat the oil over medium-high heat. Add the onion and bell pepper and cook, stirring often, until they have softened, about 4 minutes. Add the garlic and cook for another 30 seconds. Add the ground turkey and cook, breaking it up with the side of a spoon, until it is no longer pink, about 6 minutes. Stir in the sweet potatoes and chicken broth. Cook, stirring regularly, until the sweet potatoes are tender, about 10 minutes. Add the kale, ranch seasoning, salt, and pepper. Cook, stirring, until the kale has wilted.

Serve immediately topped with the ranch dressing. Store in the refrigerator for up to 3 days.
