Ingredients

chopped sun-dried tomatoes

white wine

fresh gnocchi

freshly grated Parmesan cheese

chopped fresh basil

Directions

In a large skillet, melt the butter over medium-high heat. Add the shallot and garlic and cook, stirring, until they begin to soften, about 1 to 2 minutes. Add the sun-dried tomatoes and white wine. Cook, stirring occasionally, until the wine reduces by half, about 2 to 3 minutes. Stir in the broth and cream. Bring the mixture to a simmer and add the gnocchi. Cook, stirring often, until the gnocchi is cooked through, about 3 to 5 minutes. Stir in the Parmesan cheese and basil. Season with salt and pepper to taste.

Serve immediately or store in the refrigerator for up to 5 days.
