Slow Cooker Salsa Verde Chicken

This incredible slow cooker recipe takes just 5 minutes to prep and is guaranteed to be a winner in your house! Simply add chicken thighs, salsa verde, onion, jalapeño, garlic, lime juice, and cumin to your slow cooker and let things simmer away for 4-6 hours. When this dish is ready the serving options are endless! You can serve it over rice, on tostadas, add it to burrito bowls, or enjoy all on its own! 


Ingredients

prepared salsa verde
1/2
white onion, thinly sliced
1/2
jalapeño pepper, thinly sliced

garlic cloves, minced

ground cumin

boneless skinless chicken thighs

lime, juice
Salt and pepper to taste

Directions

In the bowl of the slow cooker, combine the salsa verde, onion, jalapeño, garlic, and cumin. Arrange the chicken thighs on top of the mixture. Season them with salt and pepper to taste. Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

Once the chicken is fully cooked and tender, transfer the chicken from the slow cooker to a cutting board. Using two forks, shred the chicken. Return the shredded chicken to the slow cooker and add the lime juice. Mix well.

Serve the chicken immediately or store in the refrigerator for up to 3 days.
