1/4 cup | olive oil |
3 cups | chopped baby spinach |
1 cup | shredded sharp cheddar cheese |
5 slices | turkey bacon, cooked and chopped |
1/4 cup | chopped fresh chives |
Preheat the oven to 375ºF. Line a 12-cup muffin tin. Set it aside.
In a large bowl, whisk together the flour, baking powder, salt, and pepper. Set it aside.
In another large bowl, whisk together the milk, egg, yogurt, and oil. Add the dry ingredients and mix until just combined. Fold in the spinach, cheddar, bacon, and chives. Scoop the batter into the prepared muffin tin.
Bake until the muffins are golden and a toothpick inserted into the center of a muffin comes out clean, about 20 to 25 minutes.
Serve immediately or store in the refrigerator for up to 3 days.
