When it comes to weeknight cooking, nothing beats a quick and easy stir-fry. This Honey Garlic Chicken Stir-Fry is packed with protein, veggies, and lots of great family-friendly flavor.
3/4 cup | chicken broth |
---|---|
3 tbsp | soy sauce |
3 tbsp | honey |
1 tbsp | cornstarch |
3 | garlic cloves, minced |
1 tbsp | oil |
2 | boneless skinless chicken breasts, cut into 3/4 inch cubes |
2 cups | broccoli florets |
2 | carrots, peeled and sliced |
1 | yellow onion, thinly sliced |
Salt and pepper to taste |
In a small bowl, whisk the chicken broth, soy sauce, honey, cornstarch, and garlic until they are well combined. Set aside.
In a large skillet, heat the oil over medium-high heat. Add the chicken and season with salt and pepper. Cook, stirring occasionally, until the chicken is golden on all side, 6 to 8 minutes. Add the carrots and onion and cook, stirring, for 2 to 3 minutes. Add the broccoli and sauce and to the skillet and mix well. Cover and cook until the broccoli is tender and the sauce has thickened, 3 to 4 minutes.
Serve immediately or store in the refrigerator for up to 3 days.
