1/4 | English cucumber, diced |
2 | celery ribs, sliced |
1/2 | red bell pepper, diced |
1/4 | red onion, finely diced |
1 tbsp | olive oil |
1/2 | lemon, juice |
1/2 cup | chopped green leaf lettuce |
1 | whole wheat pita, cut in half |
Salt and pepper to taste |
In a large bowl, combine the tuna, cucumber, bell pepper, celery, onion, oil, and lemon juice. Season the mixture with salt and pepper to taste.
Fill each half of the pita with the lettuce and the tuna mixture.
Serve immediatley.
