Ingredients

3 tbsp
butter
1
shallot, minced
2
garlic cloves, minced
1 1/2 cups
dried orzo
1/4 cup
white wine
3 cups
chicken broth
1 lb
asparagus, trimmed and cut into thirds
2 tbsp
goat cheese
2 tbsp
chopped fresh parsley
Salt and pepper to taste

Directions

In a large skillet, melt the butter over medium-high heat. Add the shallot and garlic and cook, stirring, until they begin to soften, about 1 to 2 minutes. Add the orzo and white wine and continue to cook, stirring, until the white wine has evaporated, about 1 to 2 minutes. Stir in the broth and bring the mixture to a simmer. Reduce the heat to medium and cook, stirring occasionally, until almost all of the liquid has been absorbed, about 7 to 8 minutes. Stir in the asparagus and cook, stirring constantly, until the asparagus is bright green and tender, about 2 to 3 minutes. Stir in the goat cheese until it is completely melted. Season with salt and pepper to taste. Stir in the parsley.

Serve immediately or store in the refrigerator for up to 3 days.
